Kitchari is like Ayurveda’s “chicken soup”. It is warm, nourishing and delicious. The combination of rice and split moong make for a complete protein and the variety of spices makes the dishes very easily digestible - perfect if you’re not feeling well or looking to give your gut a much needed break and re-set. You can add whatever vegetables you’d like, just note that root vegetables take longer to cook and should be added at the beginning compared to lighter vegetables like leafy greens that can be added towards the end.
